  • Big goat cheese 1
  • Pistachios 25 g
  • Yolk 1
  • Sugar g
  • Ground black pepper
  • Salt
  • Fresh thyme

How to make a thin tart with caramelized chives and goat cheese

We will start by preheating the oven to 180ºC. Then we chop the chives into rings and sauté them for a few minutes in a pan with a splash of oil, until we see them begin to brown. Season with salt and pepper and add the sugar on top of them, letting them caramelize for five minutes. We remove and let it temper.

Then we spread the sheets of brick pasta at the base of the mold (23 cm), separating them from each other to form a small ruffle. Spread the spring onion over the entire surface, then the goat cheese cut into slices, the pistachios, and finally a drizzle of olive oil.

We paint the protruding edges of the dough with the beaten egg yolk. Bake for twenty minutes or until we see the melted cheese and the golden brick dough. Garnish when it comes out of the oven with thyme stick or our favorite fresh aromatic herb.
